Bake Chicken Stuff with sticky rice
Bake Chicken Stuff with sticky rice

Ingredients:

  • 1 whole chicken...remove bones if possible
  • 1 onion ...small dice
  • 2 celery sticks....small dice
  • 2 carrots.....small dices
  • 3 cloves of garlic....minced
  • 1 red bell peppers
  • 1 tbs olive oil
  •  fresh crack black pepper to taste
  • 3 table spoon of soy sauce
  • 1 cup of cooked sticky rice...adjust rice depends on size of chicken.
  • your favorite hot sauce....optional

 Preparations:

 Sweat onion, celery, carrot, peppers and garlic in pan with olive oil.  Add rice and seasonings and set aside to cool down before stuffing the chicken.

Deboned chicken if possible and properly stuff the chicken with the sticky rice as tight as possible and tied the drum stick together with butcher's twine. 

Rub chicken with olive oil or butter and a little salt and pepper to taste.  Place chicken on a baking rack and bake chicken  at 350 for approximately 50-60 minutes....depending on size of chicken.

** use the drippings to make gravy by adding equal parts of butter and all purpose flour to a sauce pan on medium low heat  with continuous wisking until flour reached a light brown color.  Add the drippings and a splash of white wine or cognac.....remember to removed all the fat out of the drippings before adding.  Season to taste with salt and pepper.
