After years of eating Pho and cooking Pho at home and at my old Restaurant, plus secret tips from friends in the Pho business, I decided to share this delicious and healthy recipe with all you all. Please note that everything is adjustable to fit your own taste.
1. Roast 1 large onion and 1 medium ginger at 350 for 30 min.
2 Prepare 4 carrots, 4 stalks of celery, 1 medium diakon radish, center core of 1 fresh pineapple, and 3 cloves of garlic.
3. Prepare Pho spices, you can buy pre-packaged Pho spices from a box or roast your own, and the main spices are cinnamon sticks, star anise, whole cloves, whole pepper corn. If making your own then roast for 5 min until become aromatic.

4. in large pot, add 7 quarts of bottle water and all ingredients above boiling for 1 hr.

5. add in 8 table spoons of fish sauce, 2 table spoon of kosher salt, 2 table spoon of rock sugar or reg sugar, 2 table spoon of mushroom seasoning or 2 can of chicken broth.
6. Add chicken to pot and continue to simmer for 45 min or until chicken is fully cooked.

7. Removed cooked chicken and everything in pot, it should leave you with a clear aromatic broth. At this point taste and adjust your seasoning. In a serving bowl prepare your noodles according to packet instructions. Tear in chicken and pour on broth. Serve with green and thinly sliced white onions, cilantro, basil, been sprouts, hoisin and hot sauce, throw in some jalapenos peppers for taste and extra kick.
