Although, every Vietnamese household possess their own pho recipe and proudly claims that it is the best, still I find it hard to agree with all. In addition to my family recipe and my restaurant recipe, I have extensively put a lot of effort in researching this wonderful delicious Vietnamese claim to fame in the food world. Here are a few of the key things to look for when searching for that perfect bowl of Pho.
The first thing is the broth; it should be clear and aromatic with the taste of natural sweetness not of sugar or MSG. Next for me is the briskets, must be fresh and the fat color is yellow, this shows that it is a better cut of meat. I tend to lean towards a more tender cut of beef than the most common top-round, which is chewy for me. Stay away from old meat with colors of the rainbow on it, which tells me that it is not fresh. Next in line would be the freshness of the veggies. Sometimes they would bring out dark bean-sprouts, or basils with dark spots, maybe even the limes are colored. All these are signs of what makes a perfect bowl of pho.
Of course the perfect bowl of pho can only be from your own home made because you know exactly what goes in it and therefore, will enjoy it better.
