Ingredients:

1 pound of Jumbo Prawn heads on (12-16)
2 table spoons of tomato paste
2 Roma Tomatoes
2 minced garlic cloves
1 large shallots
2 stocks of green onion
1 can of chicken broth or vegetables broth
half cup of white wine
1 tablespoon of fish sauce
1 teaspoon of sugar
1 tablespoon of butter
2 tablespoons of olive oil
Kosher salt and fresh ground black pepper to taste

clean you prawns by soaking in cold salted water for 15 minutes and trim all the legs and anything sharp on them, leaving heads not the eyes and the shell on.

start by adding oil in a hot pan or pot, then add in shallots, and the white parts of green onions, stirring for 1 minutes.

stir in tomato paste for 1 minutes then add in tomatoes for another 1 minutes, then add in fish sauce and wine for another 1 minute before add in the broth.

After the broth come to a boil for about 5 minutes then you will add in your prawns and adjust your seasoning with salt and pepper and sugar. After a couple of minutes when prawns is done then turned off the stove and add in butter to sauce. Do not over cooked the prawns. Served over white rice and garnish with the remainder of the green onions and a little cilantro is optional.
