BITTER MELON SAUTEED WITH BACON (mướp đắng xào thịt ba rọi)

Bitter melon with bacon (muop dang)

This is my spin on a traditional Vietnamese dish of sauteed bitter melon with eggs.
INGREDIENTS:
  • 1 LARGE BITTER MELON, seeded and thinly sliced
  • 1 clove of garlic and 1 shallots, minced
  • 3 thin slices of pancetta or bacon, small dices
  • 2 large eggs, beaten
  • dash of fish sauce, salt & pepper, sugar, and chili powder
START BY CRISPING THE PANCETTA OR BACON IN A LARGE SAUTEED PAN WITH A LITTLE OIL THEN REMOVE FROM PAN AFTER THEY ARE CRISPY.  THEN ADD GARLIC & SHALLOTS TO PAN AND STIR FOR ABOUT 20 SECONDS THEN ADD BITTER MELON AND ALL REMAINING SEASONING AND STIR FOR 1 MINUTE THEN ADD EGGS AND COOK UNTIL EGG IS DONE.  SPRINKLE WITH PANCETTA BEFORE SERVING.
